King prawn with crab, mango and apple
This is a very easy starter that takes no time at all to assemble – perfect for a relaxed dinner party. Fresh crab is preferable but tinned white crab is perfectly acceptable.
Serves 4
Ingredients
12 cooked king prawns
120g white crab meat
2 tablespoons mayonnaise
Fresh lemon juice
Salt & pepper
2 Ripe avocados peeled and sliced thickly
2 Ripe mangoes sliced thickly
1 dessert apple diced and sautéed in a little butter and lemon
3 tablespoons extra virgin olive oil
Make a vinaigrette dressing by whisking together the olive oil with one tablespoon of lemon juice and salt and pepper to taste.
Combine the crab meat with enough mayonnaise and lemon juice to bind. Season with salt and pepper to taste. Shape into quenelles with two teaspoons.
To assemble
Place the thickly sliced mango in the centre of a plate.
Top with the avocado slices and then the king prawns.
Arrange the quenelles of crab and sautéed apple around the edge.
Drizzle a little vinaigrette over the dish and serve.
