Vegan Brownies with whipped coconut cream and raspberries

INGREDIENTS-

3 tbsp water

2 tbsp ground flax seeds (for the flax egg)

185g plain flour

(or I made it gluten- free with 3/4 chestnut flour and 1/4 ground almonds)

1/4 tsp baking soda

7 tbsp cocoa powder

4oz semi – sweet chocolate chopped into 1/4 inch pieces

1 tsp of espresso powder (or any coffee granules)

3/4 tsp sea/ rock salt

50ml of boiling water

300g of sugar

(I use xylitol or coconut palm sugar)

6 tbsp vegan butter/ margarine melted

1 1/2 tsp vanilla extract

60g chopped walnuts (optional)

METHOD:-

In a small cup mix flax seed and water together, leave for 10 mins until it

becomes gloopy. 

Preheat oven to 350F (177C).

Line an 8 x 8 inch baking dish with parchment paper leaving an overhang on opposite sides to lift it out when cooked.

Whisk flour and baking soda in a small bowl.

In a medium dish add cocoa powder, chocolate, coffee and salt, add the boiling

water and mix with a spoon until all chocolate has melted.

Add sugar, vegan butter, vanilla and flax egg, mix until smooth by hand or with an electric mixer, stir in walnuts if using them then mix in flour and baking soda.

The mixture will be extremely thick and you may have to use your hands to mix.

Transfer to the baking dish and press dough into place.

Bake on middle shelf for 25 mins.

Leave to cool for about an hour (if you can wait!).

Turn out onto cooling rack then slice into squares when completely cool.

Coconut whipped cream

Leave a tin of coconut milk in fridge overnight, next day

scoop all cream off but leave the water (you don’t use this)

then just whip either by hand or electric mixer.

Serve the brownies with the whipped coconut cream and

fresh raspberries with a sprig of mint.

They won’t last long I promise you!
