This month is all about food (and wine), hospitality and a fabulous draw (see below)!
is an exciting, proactive and creative initiative that was developed by Simon Wright (Wright’s Food Emporium) and Naldo Diana (Coleg Sir Gar) to help and support the Welsh hospitality industry. The UK hospitality industry has been severely challenged, particularly post-pandemic, by the extreme shortage of skilled employees, both in the front of the house and in the kitchen. The Cook 24 project aims to redress this imbalance and emphasize the importance of the industry and the skills required to work within Welsh hospitality.
Candidates take part in a 24 day course where they learn kitchen skills from top Welsh Chefs, such as Jen Goss, Phil Leach, Tom Furlong, Scott Davis and Stephen Terry. Upon completion of Cook 24, they are ready to be unleashed into the wonderful world of Welsh hospitality! As part of the Cook 24 project, candidates also take part in the one day WSET Level 1 Award in Wines qualification and learn about grape variety characteristics, wine making, wine tasting and wine & food pairing.
Three cohorts have completed Cook 24 so far with brilliant stories of resulting success! Gabriel Fernandez-Gomez has been closely involved with the implementation of the project and is thrilled with the success to date. Gabriel has been supporting the students and has helped them overcome individual challenges. He has been instrumental in encouraging them to find what types of food they feel drawn to cook, so they can grow and flourish within whatever working capacity they eventually choose.
